Abstract
The optimum conditions for extracting antioxidants from Fu brick tea and its antioxidant activity were investigated by single factor and orthogonal experiments using the rate of scavenging hydroxyl radicals and reducing power as indexes. The results showed that the optimum extraction conditions of antioxidants from Fu brick tea were as follows:50% ethanol,at 75℃ for 2.5 h,ratio of solid to liquid of 1∶25. Antioxidants from Fu brick tea had strong ability to scavenge hydroxyl radicals and reducing power,and had good measuring dependent. Its antioxidant ability was lower than that of Vc under the same concentration.
