Abstract
With the improvement of living standards,the need for high quality rice noodle products has been greatly increased. The paper summarized the research on drying technologies of rice noodles,and the advantages and disadvantages of these technologies,mainly included the effects of hot air drying,microwave drying and infra-red drying on rice noodles quality and the problems existed in these technologies. Finally,the development trend and application prospects of drying technologies in rice noodles were discussed. It provides a reference for further research on improving drying technologies for rice noodles.
