    Optimization of enzyme-assisted extraction technologyof polyphennols from peanut shells by responsesurface methodology

    • In this paper,on the base of single factor test,pH value,enzyme amount,enzymolysis temperature andenzymolysis time were selected as influencing factors and polyphennols yield was used as response value,the enzymeassistedextraction technology of polyphennols from peanut shells was explored using the Box-Behnken experimental designand response surface methodology with four factors and three levels,and the regression equation was established. The resultsshowed that the optimal conditions were as follows:pH 5.2,enzyme amount of 8.8 mg/g,enzymolysis temperature at 51℃for 2.4 h. The extraction rate of polyphennols was 6.887 mg/g under the optimal conditions,which was consistent with thepredicted value(6.91 mg/g).
