Study on fatting effects and meat quality of Fleckvieh Simmental Guizhou beef cattle

Abstract
The aim was to study the effect of Fleckvieh cattle frozen semen hybridized with Simmental Guizhou Local hybrid cattle on production performance and meat quality parameters. 10 SimmentalGuizhou Local bull and 10 Fleckvieh伊 Simmental Guizhou bull with 340 kg were used respectively, and 60 d fattening feeding trial was conducted. The results showed that the weight gain, feed conversion ratio, net energy conversion ratio, protein conversion ratio, meat production, dressing percentage, loin muscle area, beef marbling cooked meat percentage and water-retention rate of experimental group were 29.1% (P<0.01), 13.9% (P0.01), 8.11%(P0.05), 6.82%(P0.05), 11.13% (P<0.01), 1.65% (P>0.05), 3.53% (P>0.05), 39.34% (P<0.01), 16.5% (P<0.01), 4.53% (P>0.05), and 3.36% (P>0.05) higher than the control group. The shear stress was 19.79% (P<0.01) lower than the control group. The beef content of water, protein, fat, minerals, amino acids, nutritional mineral had little change, but the difference was not significant. Thus we believed that the Fleckvieh Simmental Guizhou hybrid cattle were better than the Simmental伊Guizhou hybrid cattle, and particularly conducive to produce high-grade beef production.
