Research and application of Lingnan characteristic fruit wine

This paper investigated fruit wine and application of 12 fruits including lychee, banana, papaya, pineapple, longan, mango etc from the view of making industry and research progress in special fruit wine. The industrial significance and brewing process of 4 famous fruit wines in Lingnan were detailed. Meanwhile, this paper analyzed 4 main problems in Lingnan fruit wine production, which contained imperfect technical basis, limited deep procession, lack of industry standard and small consumer market. At last, this thesis made a suggestion on the development of deep processing of Lingnan sepcial fruit wine.
