Correlation analysis of serum biochemical indices and meat quality traits in Xingyi duck

Abstract
The serum biochemical indices and meat quality traits of adult Xingyi duck were measured,the significance testing and correlation analysis were carried out subsequently in this study. The results showed that there was no significant difference in meat quality between male and female individuals, however, the contents of globulin (GLO),alkaline phosphatase (AKP), triglyceride (TG), total cholesterol, total protein in drake individuals were significantly higher than female ducks (P<0.05) except for Alb/GLO ratio among various serum biochemical indices. Additionally, there were significant positive correlation between the flesh colour and tenderness (P<0.05) and even reached the highly significant positive level for flesh colour and acidit of different ducks (P<0.01). For the serum biochemical indices, it demonstrated that there were highly significant positive correlation between the total protein and many other indices including albumin,globulin, lactic dehydrogenase (LDH) and total cholesterol (P<0.01), moreover, the similar correlation also existed in total cholesterol and TG (P<0.01). However, there were significant negative correlation between acidity and Alb/GLO ratio and highly significant negative correlation between driage and LDH, the correlation between acidity and LDH was significantly positive (P<0.05). The results could be treated as a reference for the study on improving the duck meat quality, and laid the foundation for study on serum biochemical indices and meat quality traits of duck, also provided theoretical basis for marker assisted selection of biochemical genetics marker of Xingyi duck.
