Abstract
The Bifidobacterium genus, as a gastrointestinal physiological probiotic bacteria, has been widely used in food, medicine and feed industries. Due to the harsh conditions of this bacteria's growth and survival, it is urgent to solve the problem that how to ensure the viable bacteria quantity and the product qualities in the process of production and storage. Of all the factors that influence the products, temperature is one of the most important. the study aimed to review effect of temperature on growth of bifidobacteria and product qualities.
