Abstract
This paper studied the effects of drying aids and spray drying parameters on the quality of passion fruit powder by using spray drying method,and its main raw material were passion fruit peels. The results showed that all the types and amounts of drying aids,spray drying parameters had a significant impact on the powder collection rate,water content,solubility,and dissolution time of the passion fruit powder. The dissolution time of passion fruit powder tended to shorten with the increase of soluble starch content,while the increase of the content of sodium carboxymethyl cellulose( CMC) would prolong the dissolution time,which was leading to poor solubility of the powder. The optimum proportions of auxiliary drying agent and spray drying process through single factor and orthogonal test were as follows: the addition level of soluble starch and CMC were 90% and 6% separately,feed flow was 600 mL/h,inlet air temperature was 170℃,and passion fruit powder from experiment was delicate,reddish, and aromatic. The powder collection rate was 34.7%,the moisture content was 3.52%,and the solubility was 82.17%.
