不同品种菊芋块茎及茎叶营养成分分析比较

    Analysis and comparison of stem leaf and tuber nutritional composition in different Jerusalem artichoke

    • 摘要: 对红菊芋、白红菊芋、球白菊芋、长白菊芋、白菊芋5种菊芋的块茎及茎叶的营养成分进行分析比较,结果表明,菊芋块茎的总糖含量占干重的70%以上,长白菊芋块茎的菊糖含量最高,平均达77.5%。菊芋茎叶的蛋白质含量都小于10%,而灰分含量在5%~10%之间。红菊芋茎叶在水分、灰分、脂肪、水溶性成分、适口性指标上皆最高,最适宜作为牲畜饲料。

       

      Abstract: This research analyzed tuber and stem leaf nutritional composition of red, white-red, round-white, long-white and white Jerusalem artichoke. The result showed that the total sugar contents of Jerusalem artichoke tuber were above 70% of dry weight, the inulin content of long-white Jerusalem artichoke reached the maximum content (averagely 77.5%). The protein contents of stem leaf in all Jerusalem artichoke were below 10%, while the ash content were 5%~10%. Among the 5 kinds of Jerusalem artichoke, the water, ash, fat,water-soluble content, palatability index of red Jerusalem artichoke leaf were maximum which was best proper for common feed.
