Abstract:
To explore the nutritional value of mango processing wastes, bioactive compounds and antioxidant capacity of three mango cultivars were investigated. Results showed that, fructose content was the highest in mango peel; however glucose content was the greatest in mango embryo. In fruit peel, total sugar content of ‘Renong 2’ was higher than that of other cultivars. In mango embryo, ‘Yuexi’ mango had the greatest content of total sugar. Mango peel had higher sugar content than embryo. Mango peel and embryo contained abundant phenolic substances, total phenols contents were 103~119 mg/g and 90~113 mg/g. There were higher contents of phenolic acid and tannin in phenolic substances. Total phenols content of fruit peel was higher than that in fruit embryo, and stronger antioxidant activity was found in peel. These results suggested that extracts of mango processing wastes had potential value of development and utilization in health industry.
