Abstract: Agricultural products play an important role in our daily lives，and are a part of our economic sources， but there are safety problems in agricultural production，processing，transportation and storage process. For discussing the application and development trend of electronic nose，in this article，the principle and constitutes of electronic nose，and the current situation of gas sensitive sensor and its array，signal preprocessing and pattern identification were presented. Its application developments were roundly analyzed in the fields of agricultural product quality and safety，such as freshness detection，flavor evaluation，adulteration identification，disease monitoring，and physical and chemical index，etc. The current problems of this technology were also put forward，and its development tendency was prospected. This review will hopefully provide some references for future development of related research and industry.
