贵妃鸡肌肉脂肪酸的GC-MS 分析

    Analysis on components of fatty acid in muscle of Royal chicken by GC-MS

    • 摘要: 应用气相色谱-质谱(GC-MS)联合技术对贵妃鸡肌肉脂肪酸组分进行分析, 并计算各脂肪酸的相对百分比含量结果表明贵妃鸡肌肉中共分离和鉴定出21 种脂肪酸其中饱和脂肪酸6 种,分别是豆蔻酸,十五烷酸,棕榈酸,十七烷酸硬脂酸和花生酸,占总脂肪酸的28.61%,不饱和脂肪酸(UFA)15 种,分别是十四碳一烯酸,棕榈油酸,油酸,亚油酸,十七碳烯酸9,12,15-十八碳三烯酸11-二十碳一烯酸11,14 二十碳二烯酸8,11,14-二十碳三烯酸,花生四烯酸(AA),芥酸二十二碳五烯酸(DPA)4,7,10,13,16,19-二十二碳六烯酸甲酯(DHA),酌-亚麻酸,11,14,17-二十碳三烯酸,占总脂肪酸含量的71.45%多不饱和脂肪酸(PUFAs)占总脂肪酸含量的25.08%,必需脂肪酸占总脂肪酸含量的23.52%

       

      Abstract: The components of fatty acid in Royal chicken were analyzed by gas chromatogrphy-mass spectrometry (GC-MS) technology, and the relative content of each fatty acid was calculated. The results showed that, 21 kinds of fatty acid were separated and determined from the muscle of Royal chicken. Among them, 6 kinds of fatty acids including Myristic acid, Pentadecanoic acid, Palmitic acid, Heptadecanoic acid, Stearic acid and Arachidic acid were saturated fatty acid, accounting for 28.61% of the total fatty acid. 15 kinds of fatty acids including Myristelaidic acid, Palmitoleic acid, Oleic acid, Linoleic acid, Heptadecenoic acid, 9,12,15-Octadecatrienoic acid, 11- Eicosenoic acid, 11,14-Eicosadienoic acid, 8,11,14-Eicosatrienoic acid, Arachidonic acid, Erucic acid, Docosapentenoic acid was unsaturated fatty acid, and they accounted for 71.45% of the total fatty acid. The poly unsaturated fatty acid accounted for 25.08% of the total fatty acid and the essential fatty acids accounted for 23.52%
