摘要: 深入了解碱性蛋白酶水解丝素蛋白的作用机理,通过对酶促水解反应过程研究,并根据试验结果和经验公式推导,得可控酶解动力学方程。对推导出的模型准确性进行试验验证,结果显示在一定的范围内可以表征碱性蛋白酶-丝素蛋白的反应规律。Abstract: Studying the reaction process of the alkaline protease hydrolyze meat protein of silk in depth. By studying the reaction process that enzyme can accelerate hydrolysis and basd on the result of the experiment and experience formula, controllable enzymatic hydrolysis dynamics equation can be deduced. By testing the accuracy of the deduced models, there comes the result which can characteristic the reaction rule of the alkali protease- silk grain protein in a certain range.
