3种大头菜生物活性物质含量与抗氧化能力比较分析

    Comparative Analysis of Bioactive Substance Contents and Antioxidant Capacity among Three Root Mustard Accessions

      目的 针对大头菜地上部利用率低和鲜食品种缺乏的问题,研究不同大头菜材料及食用部位的营养优势,为其综合应用和品种选育提供理论依据。
      方法 以地方品种‘宜宾大头菜’为对照,测定‘宜宾大头菜’‘CJJ-7’与‘ZJJ-18’3种大头菜叶片与肉质根的可溶性糖、可溶性蛋白、叶绿素、类胡萝卜素、花青素、抗坏血酸、总酚、类黄酮、芥子油苷等生物活性物质含量与抗氧化能力,并对其进行主成分分析、相关性分析与遗传效应方差分析。
      结果 3种大头菜叶片的生物活性物质含量及抗氧化能力均显著高于肉质根,叶片的可溶性蛋白含量为肉质根的1.57~2.83倍,叶片的总叶绿素、总类胡萝卜素、抗坏血酸、类黄酮、总酚含量分别为肉质根的58.33~99.02、14.06~28.03、1.39~2.29、13.79~30.37、3.26~4.25倍,叶片的总芥子油苷含量为肉质根的1.56~3.84倍。‘ZJJ-18’叶片的抗氧化能力与总芥子油苷含量最高,其抗坏血酸、类黄酮、总酚、总芥子油苷含量与FRAP值分别是‘宜宾大头菜’的1.12、1.26、1.27、1.47与1.75倍,且仅‘ZJJ-18’叶片检测出花青素。‘ZJJ-18’和‘CJJ-7’肉质根的可溶性糖含量分别为‘宜宾大头菜’的1.31和1.24倍,而其肉质根的总芥子油苷含量仅为‘宜宾大头菜’的54.92%和59.55%。
      结论 ‘ZJJ-18’叶片的生物活性物质含量与抗氧化能力较高,可用于制作盐菜等腌制蔬菜加工产品。‘ZJJ-18’和‘CJJ-7’肉质根的可溶性糖含量较高且芥子油苷含量较低,可作为大头菜鲜食品种。

       

      Abstract:
      Objective To address the problems of low utilization rate of above-ground parts and the shortage of fresh-eating varieties in root mustard (Brassica juncea var. megarrhiza) varieties, this study investigated the nutritional advantages of different root mustard germplasms and their various edible parts, aiming to provide a theoretical basis for their comprehensive application and variety breeding.
      Method Taking the local variety 'Yibin Root Mustard' as the control, this study determined the content of soluble sugar, soluble protein, chlorophylls, carotenoids, anthocyanins, ascorbic acid, total phenolics, flavonoid, glucosinolates, as well as antioxidant capacity in leaves and fleshy roots of three root mustard accessions 'Yibin Root Mustard' 'CJJ-7' and 'ZJJ-18'. Principal component analysis, correlation analysis and analysis of variance for genetic effects were also analyzed.
      Result The contents of bioactive substances and antioxidant capacity in leaves of the three root mustard accessions were significantly higher than those in fleshy roots. The soluble protein content in leaves was 1.57-2.83 times that in fleshy roots. The contents of total chlorophylls, total carotenoids, ascorbic acid, flavonoid and total phenolics in leaves were 58.33-99.02, 14.06-28.03, 1.39-2.29, 13.79-30.37 and 3.26-4.25 times those in fleshy roots, respectively. The total glucosinolates content in leaves was 1.56-3.84 times that in fleshy roots. 'ZJJ-18' exhibited the highest antioxidant capacity and total glucosinolates content in leaves. The contents of ascorbic acid, flavonoid, total phenolics, total glucosinolates and FRAP value in 'ZJJ-18' leaves were 1.12, 1.26, 1.27, 1.47 and 1.75 times those of 'Yibin Root Mustard' leaves, respectively. Anthocyanins were only detected in leaves of 'ZJJ-18'. The soluble sugar contents in fleshy roots of 'ZJJ-18' and 'CJJ-7' were 1.31 and 1.24 times those of 'Yibin Root Mustard', while the total glucosinolates content in fleshy roots were only 54.92% and 59.55% of 'Yibin Root Mustard', respectively.
      Conclusion Leaves of 'ZJJ-18' possess high contents of bioactive substances and strong antioxidant capacity, which could be used for processing pickled vegetables such as salted mustard greens. The fleshy roots of 'ZJJ-18' and 'CJJ-7' have high soluble sugar content and low glucosinolates content, making them suitable as fresh-eating root mustard cultivars.
