粮食中黄曲霉毒素B1减毒技术应用研究进展

    Research Progress on Application of Aflatoxin B1 Detoxification Technology in Grain

    • 摘要: 黄曲霉毒素B1(AFB1)是一种由黄曲霉菌代谢产生的具有强致癌性的真菌毒素,对人畜健康和农业经济均构成重大影响。由于AFB1的危害性极高,因此防控AFB1成为保障粮食安全的重要研究方向。该文综述利用物理、化学以及生物技术对AFB1进行减毒的方法和措施,同时阐述不同减毒技术对AFB1的降解机制。然而单一的减毒技术虽各有优势,但也存在一定的局限性,因此提出联合多种减毒技术的应用策略。联合应用减毒技术通过整合多种减毒技术的优势,能够有效克服单一减毒技术的局限性,可显著提高黄曲霉毒素B1的减毒效率,同时降低降解产物的毒性,减少对粮食品质和营养成分的影响,具有显著的创新性和实用价值。该文还对黄曲霉毒素减毒技术未来的研究方向进行展望,为AFB1减毒技术提供新的思路和解决方案。

       

      Abstract: Aflatoxin B1 (AFB1) is a highly carcinogenic fungal toxin produced by the metabolism of Aspergillus flavus, posing significant risks to human and animal health as well as agricultural economics. Given the extreme hazards of AFB1, its prevention and control have become a critical research focus for ensuring food safety. This paper reviews methods and measures for reducing the toxicity of AFB1 using physical, chemical, and biological technologies, while also explaining the degradation mechanisms of AFB1 under different detoxification technologies. However, while each individual detoxification technology has its advantages, they also have certain limitations. Therefore, this paper proposes a strategy for combining multiple detoxification technologies. By integrating the advantages of various detoxification technologies, this approach can effectively overcome the limitations of individual technologies, significantly improve the efficiency of AFB1 detoxification, reduce the toxicity of degradation products, and minimize the impact on grain quality and nutritional components, demonstrating significant innovation and practical value. Additionally, future research directions for aflatoxin detoxification technology are explored, providing new insights and solutions for AFB1 detoxification technology.
