高不饱和脂肪酸特膳食品研究进展

    Research and Development of Foods for Special Dietary Uses with Highly Unsaturated Fatty Acids

    • 摘要: 脂肪酸是膳食脂肪的重要结构组分,可分为饱和脂肪酸(Saturated fatty acids, SFAs)和不饱和脂肪酸(Unsaturated fatty acids, UFAs),其中,UFAs在预防心血管疾病、糖尿病、神经退行性疾病、癌症,以及促进神经系统发育、抗炎、免疫调节及调节肠道菌群等方面均具有显著功效。其分子机制涉及调控相关疾病信号因子的分泌、激活机体免疫信号,调节肠道菌群种类和丰度、维持细胞结构及功能等。特膳食品是为满足特殊生理状况或疾病、紊乱等状态下的特殊膳食需求而专门加工的食品,目前有全营养配方食品、脂肪组件配方食品、蛋白质组件配方食品、氨基酸配方食品、碳水化合物组件配方食品及电解质配方食品等,其中以UFAs为组件制备的高不饱和脂肪酸特膳食品可为婴幼儿、青少年、孕妇、老年人及糖尿病患者等特殊人群提供营养支持。该文从UFAs结构及生理功能、高不饱和脂肪酸原料的评价与筛选、高不饱和脂肪酸特膳食品的加工技术等方面进行综述,重点介绍不同剂型高不饱和脂肪酸特膳食品的制备流程及稳定化与抗氧化技术,并展望将来的研究趋势,以期为高不饱和脂肪酸特膳食品新产品的研发提供参考。

       

      Abstract: Fatty acids are important structural components of dietary fat, which can be divided into saturated fatty acids (SFAs) and unsaturated fatty acids (UFAs). Among them, UFAs have significant effects in preventing cardiovascular diseases, diabetes, neurodegenerative diseases, cancer, promoting nervous system development, anti-inflammatory, immune regulation and regulating intestinal flora. The molecular mechanism involves regulating the secretion of disease related signal factors, activating immune signals, regulating the species and abundance of intestinal flora, maintaining cell structure and function, etc. Special diet food is specially added to meet special dietary needs under special physiological conditions or diseases, disorders and other conditions. At present, there are full nutrition formula food, fat component formula food, protein component formula food, amino acid formula food, carbohydrate component formula food and electrolyte formula food, among which the high unsaturated fatty acid special diet food prepared with UFAs as components can provide nutritional support for special populations such as infants, adolescents, pregnant women, the elderly and diabetes patients. This article reviews the structure and physiological functions of UFAs, the evaluation and screening of high unsaturated fatty acid raw materials, and the processing technology of high unsaturated fatty acid special dietary foods. It focuses on the preparation process, stabilization, and antioxidant technology of different formulations of high unsaturated fatty acid special dietary foods, and looks forward to future research trends, in order to provide reference for the development of new products of high unsaturated fatty acid special dietary foods.
